Subscribe 👉 @BetterCheatMeals if you want to hit your nutrition goals and eat the food you love. 👊 Made with 2.5 cup (600 ml) glass containers Serves: 4 🫑Ingredients Chicken -1¾ lbs (790 g) diced chicken breast -1 tbsp (8 g) cornstarch -2 tsp garlic powder -¾ teaspoon salt (and pepper to taste) -olive oil cooking spray Veggies -1 onion (cut in thick strips) -3 bell peppers (cut into chunks) Sweet & Sour Sauce -¾ cup (180 g) pineapple juice (or pineapple chunks with juice) -½ cup (120 ml) rice vinegar -6 tbsp (92 g) low-sugar ketchup -4 tbsp (12 g) brown sugar substitute -6 tbsp (90 g) soy sauce -1 tbsp (8 g) cornstarch (for thickening sauce) Assembly -4 cups (375g) cooked white rice 👨🍳 Instructions -Prep your rice, use day old rice if possible -Cut chicken into 1-inch cubes. Place in bowl with seasoning and toss until evenly coated -Pre-heat a large wok or deep pan over med-high heat and lightly spray with cooking spray -Cook chicken in batches until cooked through -While chicken cooks, chop veggies -Mix all sweet and sour sauce ingredients except the cornstarch in a separate bowl -Once the chicken is done, in the same pan, add a more cooking spray then stir in the veggies and cook until softened. 3-4 minutes. Set aside with the chicken. -Add sauce mixture to the same pan and bring to simmer over medium heat, stirring constantly. -Once simmering, mix the sauce cornstarch with a bit of cold water and stir it into the pan to thicken the sauce. Keep simmering for another minute until the sauce has thickened. -Return chicken & veggies to pan and toss quickly to coat with sauce. -Serve with your rice or package up into containers. Notes: -Reduced to 2 bell peppers and swap the rice for cauliflower rice to lower the carbs. #mealprep #weightloss #fatloss
